Bulalo is a traditional Filipino beef soup dish made by slowly simmering the beef shanks with bone marrow until the soup is infused with the rich beef flavor.

With the ingenuity of Filipinos, this classic soup has been turned into another exciting dish – the Sizzling Bulalo. The cooked beef and vegetables are served on a sizzling platter and then topped with gravy rather than as broth soup for a combination of flavors that’s truly mouthwatering.

  • Flour– acts as a thickener. You can also use cornstarch; dissolve about one tablespoon in 1/4 cup water and whisk into the broth until thickened.

  • You can use a pressure cooker or Instant Pot to tenderize the beef shanks for a shorter cooking time.
  • If you do not have a sizzling or hot plate, you can use a cast iron or heavy-bottomed wide pan to serve the sizzling bulalo.

How to serve

  1. Heat the sizzling metal plate in the oven or stovetop before serving. 
  2. Melt the butter on the sizzling plate and arrange the beef shank and vegetables. 
  3. Pour the gravy on top of the meat and vegetables. Garnish with fried garlic bits if desired. 
  4. Immediately serve and enjoy with steamed rice!

How to store

  • Store leftovers in an airtight container and refrigerate for up to 3 days or freeze for up to 2 months.
  • Reheat in a saucepan over medium heat to 165 F. Add beef broth or water to loosen the consistency if needed.

Ingredients
  

  • water
  • 1/2 teaspoon whole black peppercorns
  • 2 pieces bay leaves
  • 2 pounds beef shanks
  • 1 piece sweet corn, cut into serving pieces
  • 1 large potato, peeled, and cut into cubes
  • 6 pieces green beans, ends trimmed
  • 1/4 head cabbage, cut into half
  • 5 tablespoons butter
  • 1/4 cup flour
  • 1 tablespoon soy sauce
  • salt and pepper to taste

Instructions
 

  • In a pan over medium heat, add 6 cups of water, whole black peppercorns, bay leaves, and beef shanks.
  • Bring to a boil, skimming scum that floats on top.
  • Cover, lower heat, and cook for about 1 1/2 to 2 1/2 hours or until beef is tender.
  • Remove beef and set aside. Reserve 5 cups of broth.
  • In another pan over medium heat, add reserved 5 cups of broth, sweet corn, and potatoes. Cook until tender.
  • Add green beans and cabbage. Cover and cook until vegetables are tender yet crisp.
  • Remove vegetables and set aside. Reserve 4 cups of broth.
  • In another pan, heat 4 tablespoons of butter. Add flour and whisk until smooth.
  • Slowly add reserved broth, whisking vigorously to prevent lumps.
  • Add soy sauce. Continue to cook until liquid is thickened.
  • Season with salt and pepper to taste.
  • In a sizzling plate, add 1 tablespoon of butter and heat until melted.
  • Arrange cooked beef and vegetables on the plate.
  • Pour the gravy. Serve immediately.

  • Instead of a roux, you can use cornstarch slurry to thicken the gravy. Dissolve about one tablespoon in 1/4 cup water and whisk into the broth until thickened.
