Pork Tausi

Pork Tausi, also known as pork with salted black beans, is a Filipino dish with Chinese influence. It is prepared by boiling the pork belly until tender and then frying them until golden and crisp. The black bean sauce is then cooked and poured over the pork belly.  

This pork tausi recipe will definitely liven up your meal with its flavorful sauce and crispy but tender pork slices. It’s a hearty and tasty dish that’s sure to be a crowd favorite!

  • Pork Belly– you can use pork shoulder or spareribs if you prefer a leaner cut.
  • Aromatics– onions, garlic, bay leaves, and peppercorns add depth of flavor.
  • Black bean paste – also called Chinese black bean sauce. It’s a thick, dark sauce made from fermented black beans with a sharp, savory, spicy, and slightly sweet flavor. It is a widely used ingredient in Chinese cuisine. You can substitute Hoisin sauce, black soybean paste, or oyster sauce if unavailable.
  • Fermented black beans – or also known as tausi in Filipino. These are black soybeans that are fermented in salt.
  • Chicken Base powder– Alternatively, you can use chicken bouillon or replace the water and chicken base with chicken broth.
  • Sugar– balances the saltiness of the dish.
  • Water and cornstarch– for slurry, to thicken the sauce. 

Cooking tips

  • Cut the pork in uniform sizes for even cooking.
  • Dry the tender pork well and cool completely for the best crispy texture. Deep-fry the pork in batches, and do not overcrowd the pan to keep the oil temperature from plummeting.
  • If you prefer a spicy kick to your pork tausi, add chopped finger chilies or Thai chili peppers.

  • Pork Tausi is best paired with steamed rice for a satisfying lunch or dinner.
  • Store leftovers in an airtight container and refrigerate for up to 3 days or freeze for up to 2 months.
  • Reheat in a saucepan over medium heat to 165 F. Or warm in the microwave at 2 to 3-minute intervals, stirring well between intervals.

Ingredients
  

  • water
  • salt
  • 2 pieces bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 pounds pork belly
  • canola oil
  • 1 onion, peeled, and minced
  • 4 cloves garlic, peeled and minced
  • 1 1/2 cups water
  • 1 tablespoon black bean paste
  • 1/4 cup fermented black beans (tausi), rinsed and drained
  • 1 tablespoon chicken base powder
  • 1 tablespoon sugar

Slurry

  • 1 tablespoon water
  • 1 teaspoon cornstarch

Garnish

  • chopped green onions

Instructions
 

  • In a pan over medium heat, combine pork and enough water to cover. Add 1 teaspoon salt, bay leaves, and peppercorns. Bring to a boil,, skimming scum that floats on top.
  • Lower heat, cover, and cook for about 40 to 50 minutes or until meat is tender.
  • Drain pork, transfer to a prepared dish, and season with salt.
  • Refrigerate, uncovered, overnight to cool completely.
  • Cut into serving pieces.
  • In a pan over medium heat, add 2 inches deep of canola oil. Heat oil to 350°F. Add pork and cook, turning as needed, until golden and crispy.
  • Remove from pan, drain on a wire rack, and keep warm.
  • In another pan, add 2 tablespoons canola oil. Add onions and garlic. Cook until softened.
  • Add 1 1/2 cups of water and black bean paste. Stir to combine.
  • Add fermented black beans, chicken base powder, and sugar. Stir to combine.
  • In a small bowl, add 1 tablespoon of water, and cornstarch. Stir until smooth.
  • Add slurry to the pan whisking vigorously to prevent lumps. Continue to cook until sauce is thickened.
  • To serve, arrange fried pork belly on a serving platter. Pour sauce on top and garnish with chopped onions.
