Ingredient notes

- Saba bananas– cardaba is a type of “cooking bananas.” Choose ones that are sweet but firm.
- Ground pork– Alternatively, you can use ground beef or chicken.
- Flour + Water– the batter thinly coats the meat filling to keep it moist and from falling off.
- Onions and garlic– these aromatics add depth of flavor to the cooked pork filling
- Soy sauce – for a salty, umami taste
Cooking tips

- Do not overstuff the bananas; they might split open while cooking.
- You can add vegetables like green peas, diced carrots, or bell peppers to the meat to make it more nutritious and delicious.
- Use enough oil for deep-frying. Occasionally spoon the oil on top of the bananas to cook and brown them without flipping.
- Drain on a wire rack or on paper towels to remove excess oil.
How to serve and store

- These stuffed bananas are traditionally served as an appetizer for fiestas or parties. They’re also delicious as a midday snack or main dish with rice. Serve them with banana ketchup on the side for dipping.
- Store leftovers in an airtight container and refrigerate for up to 3 days. To freeze, arrange the bananas in a single layer on a baking sheet and freeze for about 30 minutes or until firm. When frozen, transfer them to resealable bags or freezer-safe containers and freeze them for up to 2 months.

Relyenong Saba
Rellenong Saba is made with saba bananas stuffed with ground pork and then fried until golden. Perfect as an appetizer, main dish, or afternoon snack. Kids and adults alike will love the sweet and savory flavors!
Ingredients
- canola oil
- 1 onion, medium, peeled, and chopped
- 3 cloves garlic, peeled and minced
- 1/2 pound ground pork
- 1 tablespoon soy sauce
- salt and pepper to taste
- 8 to 10 pieces saba bananas, ripe but firm
Coating mixture
- 1/2 cup flour
- 1/2 cup water
Instructions
- In a pan over medium heat, add 1 tablespoon canola oil. Add onions and garlic. and cook until softened.
- Add ground pork. Cook until lightly browned.
- Add soy sauce and stir to combine. Season with salt and pepper to taste.
- Peel the saba bananas and make an incision on one side.
- Stuff with pork filling. Set aside.
- In another pan over medium heat, add about 2-inches deep of canola oil. Heat oil to 350°F.
- In a bowl, add flour and water. Stir to combine.
- Top saba bananas with flour mixture.
- Carefully add the bananas to the hot oil in a single layer with the stuffed side up. Cook until lightly browned, regularly spooning the hot oil over the bananas.
- Remove from the pan and transfer to a wire rack. Serve hot.
