Seafood Aligue Pasta

This Seafood Aligue Pasta recipe is flavored with a rich and creamy sauce made with crab paste and all-purpose cream. Lemon juice is added to cut through the richness s well as Parmesan cheese and fresh chopped parsley to boost color and flavor.

It’s very simple to make in under 30 minutes. The perfect go-to recipe when you need a quick pasta fix!

Ingredient notes

  • Pasta– you can use any type of pasta such as spaghetti, fettuccine, linguine, fusilli, or penne.
  • Seafood– the recipe uses shrimp and mussels, but you can also try clams, mussels, or squid.
  • All-purpose cream– gives a rich and creamy flavor to the dish. Alternatively, you can use heavy cream or half-and-half.
  • Crab paste– locally known as aligue or taba ng talangka in the Philippines. It is a paste derived from the roe and fat of the crab and has a reddish-orange hue. You can get this in supermarkets in glass jars.
  • Butter and Canola – mixing oil with butter will help increase the smoke point and also add flavor.
  • Lemon juice– brightens the flavor of the dish and counters the briny flavor of the seafood. You can substitute this with calamansi juice.
  • Parmesan cheese– adds a nutty, slightly sweet, and salty flavor to the seafood aligue pasta.
  • Parsley– adds color and fresh, peppery flavor

  • For a smooth consistency, cook the sauce in a simmer and do not bring to a rolling boil lest it separates or curdles.
  • Cook the pasta for 1-2 minutes less than the package directions, as it will cook further when tossed in the sauce.

Ingredients
  

  • 4 cups water
  • 12 ounces spaghetti noodles
  • salt
  • 2 tablespoons butter
  • 2 tablespoons canola oil
  • 1 onion, peeled, and chopped
  • 4 cloves garlic, peeled and minced
  • 8 pieces mussels, soaked and debearded
  • 8 pieces shrimp, tendrils trimmed
  • 1 cup all-purpose cream
  • 1 cup crab paste (aligue)
  • 1/4 cup lemon juice
  • 2 tablespoons parmesan
  • 1 tablespoon parsley
  • salt and pepper to taste

Garnish

  • lemon
  • parsley
  • parmesan

Instructions
 

  • In a pot over medium heat, add water and salt. Bring to a boil. Add spaghetti noodles and cook according to package direction until al dente. In a colander, drain well and set aside.
  • In a pan over medium heat, heat butter until melted. Add canola oil.
  • Add onions and garlic. Cook until softened.
  • Add mussels and cook for 1 to 2 minutes.
  • Add shrimp and cook just until color changes.
  • Remove mussels and shrimp from the pan. Set aside.
  • Add all-purpose cream and crab paste. Stir to combine.
  • Add cooked pasta and cooked seafood. Gently toss to combine.
  • Add lemon juice, parmesan, and parsley. Season with salt and pepper to taste.Season with salt and pepper to taste.
